Preheat the oven to 180 degrees Celsius.

Heat the olive oil in a pan and fry the spring onions.

Add the bacon and bake it brown and slightly crispy. Allow this mixture to cool slightly.

Put the eggs in a large bowl and beat them with the whisk.

Stir in the cheese, the spring onion, the bacon, the parsley and the cream. Season with salt and pepper.

Fill the patties with the mixture and place them on a baking sheet on a sheet of baking paper.

Bake the quiches golden brown in 6 to 8 minutes. The duck quiches can be eaten hot or cold.
