Peel the ginger root and put it in a pan with the brown caster sugar and water. Bring to the boil, reduce the heat and let it simmer until the sugar has dissolved and the mixture has become syrupy.

Remove the ginger root and allow to cool.

Drain a small can of pineapple pieces and collect the juice.

Put the pineapple with the ginger syrup in a food processor and puree everything. Is the mixture too thick. Then add some pineapple juice.

Peel a kiwi and cut only the green part of the fruit into small cubes.

Divide the pineapple soup over 6 small glasses and sprinkle the pieces of kiwi over it.

Let the soup cool for an hour in the refrigerator before putting the glasses on the table.
