Take the steaks half an hour before you start this recipe from the fridge.

First make the dressing by grinding everything with a hand blender into a bonded dressing. Season with salt and pepper.

Sprinkle the steaks with salt and pepper and rub them with olive oil.

Preheat the grill pan to high setting and sear the steaks on both sides in a minute. Take them out of the pan and put them on a cutting board.

Divide the arugula over the middle of the plates. Cut the steaks into thin slices and spread them over the plates along the rocket.

Sprinkle the meat with the dressing and sprinkle with capers and Parmesan cheese.
