Preheat the oven to 200ºC. Sprinkle the tilapia fillets with salt and pepper. Grease a low oven dish with olive oil.

Divide the zucchini cubes and half of the spring onions over the bottom of the dish. Place the fish fillets next to each other.

Mix the Italian herbs with the mini-circles and place the potatoes with the fish in the oven dish. Divide the olives and capers with lemon zest and juice over the fish and potatoes. Drizzle with the rest of the olive oil.

Place the dish in the middle of the oven for about 15 minutes. Sprinkle before serving with the rest of the spring onions.
