Toasted sandwich with avocado, feta and walnut pesto

Spread the sandwiches with the pesto.

Fill 4 slices with avocado, feta and a piece of rocket.

Put the remaining slices of bread with the smeared side down on the rocket.

Roast the sandwiches in a contact grill (or in a greased grill pan with a heavy lid on the sandwich) until golden brown until the feta has melted.

Cut through and serve immediately. Tasty with a green salad.
