Heat the oil in a frying pan. Slice the garlic. Fruit the garlic 1 min. Add the tomato frito and bring to the boil. Cook gently for 5 minutes.

Remove the basil leaves from the stalk. Add the mascarpone and the basil, leaving some leaves for garnishing. Season to taste with salt and pepper and warm for another 2 minutes. Tasty with pasta and meatballs.
