Puree the basil with the olive oil and a pinch of salt all fine and let stand for about 10 minutes.

Pour through a fine sieve over a bowl. Keep the ground basil in the sieve as a seasoning for soup or sauce.

Spoon with 2 wet teaspoons quenelles of the tomato mousse and garnish with a few drops of the basil oil.
