Directions

  1. Preheat the oven to 100ºC.
  2. Place the pieces of tomato on the baking sheet and sprinkle with salt. Place the sage leaves in between. Drizzle with olive oil and slide in the middle of the oven.
  3. Leave the door with a ladle between them ajar and dry the tomatoes in about 2 hours.
  4. Allow to cool and mix with lemon zest and lemon juice.
  5. Spoon in roasted glass jars and donate the olive oil until the tomatoes are underneath.
  6. Keep the pots air-tight in the refrigerator. The contents stay in the fridge for up to 1 week.
