Tortilla pie with guacamole


Tortilla cake with chilli beans, corn, jalapeños, mild salsa sauce, and soft goat's cheese served with guacamole.

Directions

  1. Puree the beans. Cut the avocado half in half. Remove the kernel and scoop out the flesh with a spoon from the peel. Squeeze the juice out of lime.
  2. Put the avocado, garlic and some lime juice in the food processor. Crumble the goat's cheese and scoop it with some salt through it.
  3. Divide the cheese, jalapeños and half of the salad dressing over half of the wraps. Cover with the other wraps.
  4. Heat a frying pan with non-stick coating and bake 1 tortilla for about 4 minutes until the cheese has melted. Turn halfway.
  5. Stack the tortillas together, with 1/3 each of the bean puree and drained corn granules in between.
  6. Garnish with jalapeños and coriander leaves. Serve with guacamole and sauce.
