Tortilla wraps with aduki beans, avocado cucarpone and tomato
Wraps with avocado, lime, mascarpone, beans, lettuce and tomato.

Directions

Put the aduki beans in a bowl and pour in as much water until they are underneath. Let the beans soak for 8 hours. Drain.

Cook the beans in a large pan with water and the bouillon tablet in 40 minutes until done. Fill the water if the pan threatens to dry.

Meanwhile cut the avocados in half. Remove the seeds and scoop out the flesh from the peel.

Cut half of the avocado flesh into cubes of ½ x ½ cm (brunoise). Grate the green skin of the lime and squeeze out the fruit. Halve the tomatoes.

Mix the avocado cubes and tomato with the lime zest and 1 tbsp juice. Season with pepper and salt.

Puree the other half of the avocado flesh with the mascarpone chilidip with the hand blender. Grate the cheese.

Prepare the wraps in the microwave according to the instructions on the package. Drain the beans.

Place the wraps on a plate and place bowls next to the aduki beans, tomato avocado salad, avocado mascarpone, grated cheese and lettuce.
