Trout with potato paste and cucumber salad


A tasty Dutch recipe. The main course contains the following ingredients: fish, potatoes (in pieces), trout, sunflower oil, lemon (in slices), fresh dill (finely chopped), cucumbers (diced), red onion (finely chopped), full curd cheese and rucola salad.

Directions

  1. Preheat the oven to 200 ºC.
  2. Potatoes boil in 20 min.
  3. Wash trout, dab dry with kitchen paper and place in oven dish.
  4. Sprinkle the trout with 1/2 tsp salt and pepper and let it cook in the middle of the oven for 15 minutes.
  5. Mix oil, few drops of lemon juice, half of dill and salt and pepper to taste until dressing.
  6. Mix cucumber, onion and dressing.
  7. Drain potatoes, mash them with cottage cheese and season with salt, pepper and the rest of dill.
  8. Arrange Rucola and cucumber salad over four plates.
  9. Place trout with lemon slices and mashed potatoes next to it..
