Grind the pistachio nuts in the food processor and mix in the sesame seeds. Transfer the mixture to a bowl.

Divide the cream pâté into eight equal pieces and roll them with moist hands into nice balls.

Roll the balls one by one through the pistachio mixture until they are completely covered all around and press this layer well.

Place the truffles on a plate and keep them covered in the refrigerator until use.

Cut the stalk of the head of lettuce and loosen the leaves.

Look for two beautiful leaves for each person and place them on a scale.

Halve the grapes. Place a paté truffle and three half grapes in each salad leaf.
