Baked turkey with sauce of coffee, chocolate, almond and spices.

Directions

  1. Halve all peppers from the pepper mix and remove the seed lists.
  2. Put the peppers in a pan with the water and bouillon tablet. Bring to the boil and simmer for 30 minutes.
  3. Put the almonds in a frying pan without oil or butter and grill for 3 min.
  4. Add the cinnamon, allspice, aniseed and cumin seeds and cook for another 2 minutes.
  5. Put the almonds with the spices in the food processor. Add the oregano, raisins, coffee beans and the salt and finely grind.
  6. Add the peeled tomatoes and cooked peppers and finely grind.
  7. Put the sauce in a frying pan and cook for 3 minutes. Keep stirring. Add as much stock until the sauce is as thick as yoghurt. Leave to simmer gently on low heat.
  8. Heat the oil in another frying pan, sprinkle the turkey with salt and pepper and fry the slices in 4 min. Until done. Turn halfway.
  9. Break the chocolate into pieces and stir through the sauce. Pour the sauce through a sieve when the chocolate has melted.
  10. Spoon the sauce over the turkey breast.
