Saltimbocca: in this case turkey wrapped with parma ham. Tasty with a sweet dessert wine sauce.

Sprinkle the schnitzels with pepper and place 2 leaves of sage on each schnitzel. Cover with the Parma ham and press well.

Divide the oil over 2 frying pans and heat. Place the meat on the ham side and bake for 4 minutes on medium heat. Turn around and cook for another 4 minutes.

Remove from the pan and keep warm on a plate under aluminum foil.

Pour over the shortening into 1 frying pan and pour in the marsala. Stir the baking utensils. Let the marsala reduce to half of the heat on high heat.

Place the saltimbocca on a plate and serve with the sauce. Yummy! .
