Chop the onion, finely chop the garlic and cut the aubergine into thin strips of 5 cm. Cut the peppers into thin strips and finely chop the red pepper.

Fry the onion and 2 cloves of garlic in a frying pan for 2 minutes in the oil. Unfreeze the tomatoes, halve and remove the seeds. Cut the flesh into cubes.

Heat the oil in a frying pan. Fry the aubergine and paprika for 10 minutes, season with salt and pepper. Scoop the vegetables in a bowl and let cool.

Stir in the yogurt, mayonnaise, remaining garlic with the water into a garlic sauce. Season with salt and pepper and store in the refrigerator until use.
