Vanilla cake with summer fruit and basil lime cream

Directions

  1. Preheat the oven to 180ºC.
  2. Mix the butter and sugar into a creamy mixture.
  3. During mixing, add the eggs one by one with the vanilla flavor and a pinch of salt.
  4. Add in parts the self-raising flour and keep mixing until smooth.
  5. Spoon this batter into the spring form and bake the cake in the middle of the oven for 45-50 minutes.
  6. Test with a stick if it comes out clean and the cake is cooked.
  7. Turn the cake on a rack and allow to cool.
  8. In the meantime, mix the mascarpone with lemon zest and the juice of 1.5 lime, the chopped basil and 100 grams of icing sugar.
  9. Cut the cake horizontally.
  10. Divide half of the basil lime cream with half of the fruit.
  11. Spoon the rest of the cream on top and place the top half of the cake on top.
  12. For the glaze, mix 200 grams of icing sugar with the milk and the rest of the lime juice.
  13. Divide the glaze over the cake.
  14. Garnish with the remaining fruit and basil leaves.
