Vanilla ginger cookies


A tasty Dutch recipe. The dessert contains the following ingredients: butter (at room temperature), white caster sugar, flour, vanilla pod, stem ginger ((450 g pot) and drained).

Directions

  1. Put the butter in a bowl and beat with the mixer for 3 minutes. Add the sugar bit by bit and mix into an airy cream. This takes 4 min.
  2. Sift the flour above and add a pinch of salt. Knead into a cohesive dough. Halve the vanilla pod lengthwise, scrape out the marrow with a knife tip and add to the dough. Slice the ginger and knead through the dough.
  3. Make a roll of the 20 cm long dough. Wrap in cling film and place in the refrigerator for 30 minutes.
  4. Preheat the oven to 170 ° C. Cut the roll of dough into slices of 1 cm thick. Place the slices on a griddle covered with parchment paper and bake the cookies lightly browned and cooked for about 20 minutes.
