Directions

  1. Split the eggs. Mix the first flour, the icing sugar, the custard powder and a pinch of salt.
  2. Mix the egg yolks with the vanilla yogurt, lemon zest and milk.
  3. Pour this mixture into portions with the flour and mix until smooth. Allow this batter to rest for 15 minutes.
  4. Beat the egg whites with the lemon juice until stiff and spat through the batter.
  5. Spoon 2-3 tbsp batter into hot butter or oil per pancake and fry the pancake for 2 minutes per side.
