Cut the celery into thin loops. Brush the tortillas thinly on each side with olive oil.
Place a tortilla with the oil side in a frying pan and spread half of the grated cheese over it.
Distribute the carrot and celery over it and sprinkle the rest of the grated cheese over it.
Place the other tortilla with the oil side facing up.
Fry the quesadilla on medium heat for eight minutes until golden brown.
Turn the quesadilla after four minutes using a lid.
Fry the other side brown and let the cheese melt.
Let the quesadilla slide on a plate and cut into points.
