Vegetable soup with pistou
A tasty French recipe. The vegetarian starter contains the following ingredients: potatoes (solid, peeled), pomodori tomatoes, vegetable stock (1 1/2 tablet), green beans (in pieces), fresh basil (very finely minced), garlic (pressed), fresh thyme leaves (finely chopped) ), olive oil and white beans (370 g).
Cut the potatoes and tomatoes into pieces. Bring the stock to a boil in a pan. Add the pieces of potato, tomatoes and green beans and bring everything to the boil. Put the lid on the pan and cook the soup gently for 10 minutes.
Meanwhile, make the pistou. Mix the basil with garlic, thyme and olive oil in a bowl. Season with salt.
Rinse the white beans in a sieve under cold running water. Add them to the soup and cook the soup for another 5 minutes. Season the soup with pepper.
Divide the soup over 4 plates and serve the pistou separately. Tasty with hot baguette.
