Vegetable tray with peanut sauce and noodles


A tasty recipe. The vegetarian main course contains the following ingredients: broccoli florets (300 g), snow peas ((200 g), cleaned), bamboo shoots (225 g), noodles (pack 500 g), wok oil, eggs, onion (in small segments) and peanut butter ( with pieces of nut (jar 350 g)).

Directions

  1. Bring plenty of water to the boil and cook the broccoli and snow peas for 5 minutes, pour them into a colander and rinse them in cold water.
  2. Let the bamboo shoots drain and absorb the moisture.
  3. Boil the food according to the instructions on the package, collecting 100 ml of the cooking liquid.
  4. Heat 1 tbsp oil in a frying pan and break in the eggs.
  5. Grind a little salt and pepper over the eggs and put a lid on the frying pan.
  6. Fry them on low heat until done.
  7. Heat in a wok2 tbsp oil and stir-fry the onion until golden brown.
  8. Add the broccoli, snow peas and bamboo shoots and stir fry for 2 minutes.
  9. With a fork, stir the peanut butter with the bamboo water and the cooking water from the noodles into a smooth sauce and stir them through the vegetables in the wok.
  10. Bring the sauce to the boil.
  11. Season with salt and pepper.
  12. Serve with the fried eggs and noodles..
