Directions

  1. Preheat the oven to 220 ° C.
  2. Halve the courgettes in length and cut the halves into 1 cm pieces.
  3. Halve the mushrooms and cut very large ones into quarters.
  4. Divide the zucchini and mushrooms over 1 or 2 baking trays lined with baking paper.
  5. Sprinkle with the herb oil and sprinkle with salt and pepper. Roast the vegetables for 10 minutes in the hot oven.
  6. Meanwhile, halve the peppers, remove the stalk and the seeds and cut the flesh into strips. Peel the onions and cut them into pieces.
