Preheat the oven to 200ºC. Knead the mince with the fish sauce, sugar, red pepper, spring onion, coriander, garlic and half of the beaten egg.

Divide this minced meat into 5 portions and roll sausages. Put the sausages on the puff pastry and fold the slices closed.

Press the seam well with a fork, cut each roll into 3 pieces and place the rolls on the baking sheet. Brush them with the rest of the egg and fry the sausage rolls in the oven for about 30 minutes until golden brown.
