Mix the butter with lime zest, juice and the chives. Form a roll in the cling film and place in the freezer. Dab the salmon dry with kitchen paper. Sprinkle with the lemon juice and sprinkle with salt and pepper. Cut the fish into wide strips.

Roast the salmon in a little oil in the gourmet pans for 1-2 minutes per side.

Cut the butter into slices and lay on the salmon.
