Watercress soup with chicken-lime balls


A tasty recipe. The starter contains the following ingredients: poultry, lime, chicken fillet (in pieces), low-fat quark (or full yogurt), shallot (shredded), watercress (75 g), chicken broth (from tablet), oil and cornstarch.

Directions

  1. Clean the lime, grate the green skin off and squeeze out the fruit.
  2. Puree the chicken fillet in the food processor with the lime juice, lime peel, curd cheese, cornstarch and 2 tbsp oil to make a smooth mixture.
  3. Turn 20 soup balls with damp hands.
  4. Heat 2 tbsp oil in a soup pot and fry the shallot until it is glassy.
  5. Add the watercress and the stock, bring it to the boil and let it simmer for 3-5 minutes.
  6. Puree the soup with the hand blender or in the food processor until it is nicely smooth and lightly bound.
  7. Pour the soup back into the pan and bring to the boil.
  8. Add the chicken balls and let the soup cook for another 5 minutes..
