Directions

  1. Finely chop the dill. Cut the watermelon into pieces and cut the flesh out of the peel. Cut the flesh into cubes of 2-3 cm. Scrape the fennel into thin strips.
  2. Beat in a wide bowl the lemon juice with the olive oil, dill and salt and pepper until a dressing and pour the watermelon and fennel through it. Let this stand for 15 minutes.
  3. Roast the almonds in a dry frying pan until golden brown. Mix the leaf lettuce and rocket salad through the watermelon mixture just before serving.
  4. Divide the salad over deep plates and place the trout fillet on it. Sprinkle the almonds over it.
