Directions

  1. Boil the rice according to the instructions on the package. Add the beet juice and the vinegar and stir briefly. Allow the rice to cool completely.
  2. Cut the tofu into bars of 1 cm. Heat the oil and fry the tofu golden brown on both sides.
  3. Cover a piece of nori with rice and make sure the whole skin is covered. Turn the skin over and lay down on a foil-covered (sushi) mat with some rice.
  4. Fill in the length with some rice, a strip of tofu, avocado, cucumber and a little ginger. Put a sheet of nori on it and roll up the sushi.
  5. Cut the roll into pieces of about 2 cm. Repeat with the rest of the ingredients. Mix the ingredients for the sauce and serve the sushi with this horseradish-ginger sauce.
