Preheat the oven to 200 ° C.

Place the bacon slices on a baking sheet covered with parchment paper and bake for approx. 12 minutes in the bottom of the oven.

Put the baguette in the top of the oven and bake in about 10 minutes.

Meanwhile, wash the leek and cut into rings.

Heat the oil in a soup pot and fry half of the leeks for 3 minutes.

Add the white beans in tomato sauce, the bouillón tablets and the water and bring to the boil.

Let the soup boil for 5 minutes. take the pan off the heat and puree with the hand blender.

Add the rest of the leeks, the white beans in tomato sauce and the Italian herbs and bring back to the boil. Cook gently for 3 minutes.

Remove the bacon and baguette from the oven and allow to cool slightly. Cut the baguette into slices.

Divide the soup over 4 deep plates or bowls and put 2 slices of bacon on each portion.

Serve the rest of the bacon and the baguette separately.
