White bean salad
A nice Turkish recipe. The vegetarian appetizer contains the following ingredients: eggs (M), onions, salt, white beans (about 800 g), tomatoes (pomodori), parsley, dill, mint, lemon, olive oil (extra virgin), white wine vinegar, ( freshly ground) pepper and black olives.

Boil eggs for about 10 minutes.

Meanwhile, peel onions and cut into rings, sprinkle with salt and leave to stand for approx.

15 minutes.

Meanwhile, drain beans and rinse with cold water.

Wash tomatoes and cut into wedges.

Parsley, dill and fresh mint finely chop.

Squeeze out the lemon.
-
In small bowl, stir in lemon juice, oil and vinegar until dressing.

Rinse onions with cold water and pat dry with kitchen paper.

Peel eggs and cut in quarter.

Fry beans, onions, tomatoes, herbs and dressing.

Season with salt and pepper.

Scoop and garnish with egg and olives.

Serve with Turkish bread..
