Directions

  1. Heat 3 tablespoons of olive oil and stir-fry the medium carrot, the leeks and the potato with salt and pepper for 10-12 minutes.
  2. Dab the fish dry and sprinkle with salt and pepper. Heat the rest of the oil and fry the fish 3 minutes per side.
  3. Remove the fish from the pan and keep warm.
  4. Add the butter to the oil. Add the lemon juice and the lemon zest with the parsley.
  5. Serve the fish with the lemon jus at the rösti and add the lemon slices.
