White rice with vegetable curry in coconut curry sauce

Boil the rice according to the instructions on the package.

Chop the onion and cut the cauliflower into small florets. Clean the mushrooms with kitchen paper and cut into large pieces.

In a wok with non-stick coating, heat the oil and fry the onion in it until it looks glassy.

Add the cauliflower florets and the mushrooms and fry them for 2 minutes on a high heat.

Pour the coconut milk and the curry powder into the pan with the vegetables, let it simmer for 15 minutes.

Season the curry with salt and pepper. Serve the curry with the white rice.
