Whitefish with orange, apricot and raisins
Also try this delicious white fish skewer with orange, apricots and raisins
- 400 gram whitefish fillet in cubes, of your choice
- 1 lemon pressed
- 3 orange
- 1 tablespoon white raisin
- 6 dried apricots in pieces
- 1 Red pepper minced, without seeds
- 3 tablespoon olive oil
- 2 tablespoon unsalted pistachio nut peeled, coarsely chopped
Drizzle the fish with lemon juice. Peel 2 oranges thick and press the third orange.
Cut the orange slices between the membranes and thread the fish cubes alternated with orange slices on the skewers.
Heat the orange juice with the raisins, the apricots and the red pepper to a low setting. Add 2 tablespoons of olive oil and salt.
Roast the pistachio nuts in a dry hot skillet and chop them roughly.
Sprinkle the fish skewers with the rest of the olive oil and roast them light brown in a few minutes under a hot oven grill, in a grill pan or on the barbecue.
Serve them sprinkled with the nuts and with the orange-apricot-raisin mixture.
