                            Wholegrain blinis with salmon
A tasty recipe. The lunch contains the following ingredients: fish, Greek yogurt (fat-free), dill (fresh or frozen), cucumber (in slices), red onion (chopped), egg (split), semi-skimmed milk, wholemeal flour, sunflower oil and warm smoked salmon steak.

                                Mix yogurt with half of dill and season with salt and pepper.
 - 
                                Place cucumber on a pan and spread to taste with the rest of dill, onion and salt and pepper.
 - 
                                Beat egg yolk and stir in milk.
 - 
                                Place flour with 1/2 tsp salt and pepper in the bowl and make a well in the middle.
 - 
                                Add milk mixture and mix with whisk or hand mixer from middle to smooth batter.
 - 
                                In other fat-free bowl of protein with pinch of salt to beat stiff peaks (note: there may not be a splash of fat!).
 - 
                                Oil in frying pan with non-stick coating.
 - 
                                Whipped egg whites carefully with spatula through flour mixture and place a small batter in a frying pan with a serving spoon (batter is sufficient for 8 small blinis).
 - 
                                Blin golden brown on both sides and serve with yoghurt, salmon and cucumber salad..
