Wholemeal club sandwich with chicken fillet, lettuce and egg


Healthy lunch of wholemeal bread with free range eggs, vegetable spread, lamb's lettuce and chicken breast.

Directions

  1. Boil the eggs hard in 8 minutes. Drain and scare under cold running water. Peel them and cut into slices.
  2. Roast the slices of bread. Spread ⅔ of the slices with the vegetable spread.
  3. Cover half of the smeared slices with some lettuce and the chicken fillet. Cover with the rest of the smeared slices with the vegetable spread upwards.
  4. Fill with the slices of egg and some lettuce. Sprinkle with freshly ground black pepper and cover with the un-smeared slices of bread.
