Heat a small amount of butter in a large frying pan and bake 8 thick pancakes from the batter. Keep them warm in the oven (75ºC) during baking.

Spoon some of the plums on the warm pancakes and crumble the goat's cheese over it. Garnish with the walnuts and thyme.
