Spaghetti with chicken fillet in pomodorini sauce
A tasty Italian recipe. The main course contains the following ingredients: poultry, wholemeal spaghetti (pack 500 g, organic), olive oil, chicken fillet (in 4 pieces), onion (finely chopped), garlic (squeezed), pomodori (cherry tomatoes, 400 g), rucola salad (150 g) and fresh basil (leaf in strips).

Cook the spaghetti according to the instructions on the package. Meanwhile, heat 2 tbsp oil in a skillet and fry the chicken fillet in 10-12 min. Until golden brown and done.

Heat 1 tbsp oil in a saucepan and fry the onion and 2 cloves garlic 1 min. Add the tomatoes, press them with a spatula piece and heat the sauce for 10 min. Gently and uncovered. Make a dressing of the rest of the oil, the rest of the garlic, pepper and salt and mix through the lettuce melange.

Remove the tomato sauce from the heat and add the basil and pepper and salt to taste. Divide the spaghetti with chicken fillet and tomato sauce over 4 (deep) plates. Serve the salad separately.
