Winterminestrone with pasta shells


A tasty Italian recipe. The main course contains the following ingredients: olive oil, leeks (in rings), garlic (finely chopped), celery (in small blocks), winter carrot (in small blocks), celeriac (in small blocks), tomato cubes (400 g), vegetables (or herbal broth (from 3 tablets), fresh thyme (leaves), pasta shells, green kidney beans (400 g) and grated Parmesan cheese.

Directions

  1. Heat the oil in a large pan, fry the leeks, garlic and celery gently for 5 minutes. They are not allowed to color. Add the winter carrot, the celeriac, tomato cubes, broth and thyme. Bring the soup to the boil and add salt and pepper to taste. Boil the soup for about 10 minutes.
  2. Add the pasta shells and kidney beans and cook the soup for about 10 minutes until the pasta is done.
  3. Divide the soup over four soup plates and add extra black pepper. Serve the cheese separately. Tasty extra virgin and ciabatato with a splash of olive oil (see tip).
