In a metal or glass bowl, whisk the egg yolks with the sugar and the rosato with an electric mixer and place the bowl on a pan with a layer of boiling water.

The water must not touch the bowl. Continue to beat the mixer for about 5 minutes to a frothy and creamy mousse. Pour into high glasses and serve with the cookies.
