Zabaglione with blackberries
A tasty Italian recipe. The vegetarian dessert contains the following ingredients: Marsala (wine (liquorice)), sugar, vanilla bean, eggs, blackberries (washed) and butter (wafers (pack a 100 g)).

Bring plenty of water to a boil in a large pan.

Bring the wine to the boil in a different pan.

Cut the vanilla pod open lengthwise, scrape out the marrow and add the marrow and the stick to the wine mixture.

Let this boil along.

Split the eggs (protein is not used).

Put the egg yolks in a smaller pan than the pan with boiling water.

Let the wine mixture cool down until it is lukewarm and whisk it in portions through the egg yolks.

Hang the pan with the egg yolk-wine mixture over the pan with boiling water, making sure that the bottom of the small pan does not touch the water in the large pan (au bain-marie).

Turn down the heat and beat the mixture for 8-10 minutes with a whisk or a frothy mixer.

Continue to beat for a few minutes until the mixture begins to bind and has become a lumpy sauce.

Pour the custard into bowls and serve with the blackberries and the wafers..
