Single tiramisu cups with marsala, sugar, cocoa powder and egg.

Bring a large pan with a layer of water to the boil. Cut open the vanilla pod and scrape out the marrow.

Hang a bowl in the pan with boiling water (the bowl must not touch the water). Split the eggs (protein is not used).

Turn down the heat and whisk in the bowl with the mixer the egg yolks with the sugar and vanilla juice to a thick cream and let it cool down.

Stir in the mascarpone with 3 tbsp of espresso (4 people) and mix lightly with the yolk cream. Divide the tiramisu over cups.

Stir in a deep plate the marsala through the rest of the espresso.

Break the long fingers in half, dip the halves one by one in the espresso and put them nonchalantly in the cups.

Drizzle some cocoa powder with a special spreader or sieve just before serving.
