Directions

  1. Need extra: hand mixer.
  2. Grate the zucchini coarsely (in the food processor).
  3. In a bowl, beat the self-raising flour with the buttermilk and eggs with the hand mixer to a smooth batter.
  4. Stir in the zucchini, grated cheese and salt and pepper.
  5. Heat a little butter in a frying pan and add three small pieces of batter.
  6. Bake the pancakes until bubbles appear on the top.
  7. Turn the pancakes and fry the other side until golden brown.
  8. Place the pancakes on a hot plate under aluminum foil.
  9. Bake three x three pancakes in the same way.
  10. Heat a tablespoon of butter in a skillet.
  11. Scoop the slices of smoked sausage through them and fry them with a light brown.
  12. Place a stack of three zucchini pancakes on four warm plates and place some slices of smoked sausage on each layer.
  13. Garnish with leaves of basil.
  14. Tasty with a salad with cherry.
