Zucchini pancakes with salmon pieces

Grate the zucchini coarsely and place in a clean tea towel. Press out as much moisture as possible.

In a bowl, beat the flour with the egg and milk into a batter.

Add the zucchini and half of the chives. Season with salt and pepper.

Heat some oil in a pan and put a heap of batter in it. Bake the pancake for about 3 minutes per side.

Cover with a dot sour cream and some salmon pieces. Garnish with the remaining chives.
