Alsatian sauerkraut


Sauerkraut with bay leaves, juniper berries, bacon, smoked sausage, potatoes and frankfurters.

Directions

  1. Cut onion into rings. Rinse sauerkraut in colander. Moisture from pressing sauerkraut.
  2. Heat in butter. Onions on low heat for about 2 minutes. Cut bacon into slices and lay on onion.
  3. Put on the sauerkraut, juniper berries, bay leaves, peppercorns and bring them to the boil together with the wine.
  4. Slowly simmer the sauerkraut for 1 1/2 hours, add extra wine or water if necessary. Meanwhile, peel the potatoes.
  5. After 50 minutes, lay smoked sausage and slices of bacon on sauerkraut. In the meantime cook potatoes with salt in approx. 20 min. In another pan.
  6. Last 10 min. Frankfurters on sauerkraut and co-heat. Drain the sauerkraut and create in an oval dish.
  7. Drain potatoes and create next to sauerkraut. Distribute meat over sauerkraut. Serve immediately.
