Sift the self-raising flour, the baking soda and cinnamon over a bowl.

Add the sugar and stir in the buttermilk with a whisk.

Break the egg over the batter and beat through it.

Melt the butter and stir through the batter.

Heat a knob of butter in a frying pan and add 3 times a large tablespoon of batter for 3 pancakes.

Fry the pancakes for 4 minutes on medium heat. Turn off after 3 min. Remove from the pan, place on a warm plate and keep warm under aluminum foil.

Bake all pancakes.

On (hot) plates, make a stack of 3 pancakes with blueberries in between. Sprinkle with the rest of the berries and drizzle with the maple syrup.
