Directions

  1. Cut the apples into pieces with skin and core. Bring to the boil with the apple juice and the cinnamon stick and simmer for 20 minutes on low heat.
  2. Make a clean tea towel wet under the tap, wring out and hang in a colander above a bowl. Pour the applesauce into the cloth and let drain for 15 minutes.
  3. Push out of the apple pulp with a spoon and collect it in the bowl.
  4. Grate the yellow skin of the lemon and squeeze out the fruit.
  5. Put the collected apple juice with the lemon zest, juice and jelly sugar in a pan and bring to the boil. Cook for 2 minutes.
  6. Pour the jelly into the jar and add another cinnamon stick. Close the jar with a lid and let it cool down in 2 hours.
