Directions

  1. Sift the flour and mix with the sugar and 1/2 teaspoon of salt. Add the butter, 1 egg and 2 tablespoons of ice cold water and knead with cold hands into a dough. Wrap the dough in cling film and leave at least 30 minutes in the refrigerator.
  2. Preheat the oven to 180ºC. Grease the mold and coat the bottom of the spring mold with baking paper.
  3. Mix the apples with the sugar, cinnamon, custard, lemon juice, rasp and berries.
  4. Roll out 2/3 of the dough on a floured sheet into a round piece (approx. 30 cm Ø) and line up the spring form. Sprinkle the soil with some breadcrumbs.
  5. Spread the apple-berry mixture in such a way that the blueberries are covered by apples, the berries burn quickly.
  6. Roll out the rest of the dough into a thin piece. Cut into strips of about 1 cm wide and lay crosses over the pie.
  7. Beat the remaining egg with the whipped cream and brush the top of the cake with it.
  8. Bake the cake in the oven for about 1 hour until golden brown and done.
