Directions

  1. Soak the apricots for eight hours in plenty of water.
  2. Boil the water in a saucepan with the sugar and lemon juice in about five minutes until a clear syrup.
  3. Put the drained apricots in the syrup and let them simmer gently until they are covered by a layer of thick syrup.
  4. Let them cool in the syrup.
  5. Push open the apricot one by one and put a spoonful of mascarpone in it.
  6. Put each apricot in a cupcake cup and sprinkle the nuts over it.
