Soak the apricots for eight hours in plenty of water.

Boil the water in a saucepan with the sugar and lemon juice in about five minutes until a clear syrup.

Put the drained apricots in the syrup and let them simmer gently until they are covered by a layer of thick syrup.

Let them cool in the syrup.

Push open the apricot one by one and put a spoonful of mascarpone in it.

Put each apricot in a cupcake cup and sprinkle the nuts over it.
