Aubergine burgers with hummus
Vegetable burger of eggplant and feta on a spelled ball with hummus and lettuce.

Cut the aubergines into round slices of 1 cm thick. Brush them with olive oil and sprinkle with salt and pepper.

Heat the grill pan and grill the slices of eggplant in approx. 10 min. Until done.

Cut the feta into slices that are as thin as possible.

Cut the spelled balls in half and cover both halves with a tablespoon of hummus.

Put a leaf of lettuce and a few slices of aubergine on the bottom half of the roll.

Put ¼ of the feta on top and then again slices of eggplant. Finish with a leaf of lettuce. Then put the top on it.
