Aubergine rolls with goat's cheese
A tasty French recipe. The vegetarian starter contains the following ingredients: eggplants, olive oil, shallot, mint, parsley, fresh goat's cheese (eg Bettince Blanc) and salt and pepper.

Grill pan until it is piping hot.

Wash aubergines, cut thin 'cap' in both sides.

Cut each length in 6 thin slices.

Cover aubergine slices with oil and roast about 3 minutes in browned brown and roast, halfway turning.

Shall chop and finely chop.

chop the fresh mint and parsley very finely.

In a bowl mix shallot, mint, parsley and goat cheese (at room temperature) and season with salt and pepper.

Spread the goat cheese mixture over eggplant slices.

Roll up aubergine slices and fix with cocktail stick..
