Aubergine rolls with parma ham

Directions

  1. Cut the aubergines (or zucchini) lengthwise into slices of 1/2 cm and brush with olive oil.
  2. Heat a grill pan and roast the aubergine slices for about 2 minutes per side until they are soft and have a nice grill pattern.
  3. Remove from the pan and keep separate.
  4. Puree the dried to oil with 10 basil leaves, anchovy fillets and some pepper.
  5. Place a slice of parma ham on each slice of eggplant and brush with a bit of tomato paste.
  6. Put a piece of mozzarella on it and form a roll.
  7. Stick with a basil with a stick.
